2 lbs. potatoes (about 6 medium)
½ cup onion, finely chopped
½ cup Vidalia sweet onion, finely chopped
1 tsp. dry mustard
1 tsp. salt
⅛ tsp. pepper
¼ cup Italian salad dressing
¼ cup white vinegar
½ cup mayonnaise
½ cup celery, chopped
2 hard-cooked eggs, cut up
¼ cup relish

Directions:

Wash potatoes. Heat salted water (e.g., ½ tsp. salt to 1 cup of water) just covering the potatoes to boiling. Add unpeeled potatoes. Cover tightly, heat to boiling, and cook for 30 to 35 minutes or until the potatoes are tender.
Drain; cool and peel.
Cut potatoes into cubes. Combine in a bowl with the onions. Sprinkle with salt and pepper; then add the dry mustard, salad dressing, and vinegar. Cover and refrigerate at least 2 hours.
Just before serving, add the mayonnaise; toss until the potatoes are well coated. Stir in the celery and eggs.
