Ricotta Stuffed Shells Recipe

For (2) casseroles 9x13. (Plus tiny dish). Tibolla party

2 boxes Barilla jumbo shells. Boil 9 min put on foil to cool
3-4 jars Marinara sauce

Mix together following

2 large ricotta cheese (30 oz)
2 large bags mozzarella cheese ( use 8 cups in mixture)
4 eggs
3 cups fresh shredded Parmesan cheese. ( use 1/2 to 1 cup in mixture)
6-8 TBS Parsley
1 large can spinach drained
1 tsp salt
1/2 tsp pepper

Grease pans and marinara sauce -thin layer. Place stuffed shells open side up and cover with sauce and shredded Parmesan and mozerella cheese

Bake covered with foil 400 for 30 min

(Can use some mascarpone cheese 8-16 oz if desired)
