60 lbs ground meat (40 lbs pork and 20 lbs beef)
2 c salt (scant - just less than 2 c)
1 c pepper
1 c sugar (white)
½ c crushed garlic
½ t saltpeter

Directions:

Mix all the ingredients together. Stuff the sausage into washed pork intestines.
