⅓ cup of water
½ teaspoon vanilla extract
Whites of 4 large eggs
Few grains of salt
⅓ cup granulated sugar
¼ cup flour
2 teaspoons baking powder
Icing sugar to sprinkle on the finished cake (optional)

Heat oven to 350ºF.

In a small saucepan cook cocoa and water over low heat for about 1 minute, stirring constantly, until mixture is thick and has just begun to boil. Remove from heat and stir in vanilla.

In a large, deep, narrow bowl (preferably metal) beat egg whites and salt with an electric mixer or rotary beater until foamy. Add sugar, 1 tablespoon at a time, beating well after each addition. Soft peaks now will hold when whites are lifted with a spatula. Quickly add cocoa mixture and beat 20 - 30 seconds longer, until just blended.

Sift flour and baking powder together over egg white mixture, ¼ at a time, folding in with a rubber spatula after each addition.

Scrape batter into an ungreased 8-inch round layer cake pan. Bake 20 - 25 minutes, until cake begins to pull away from sides of the pan.

Remove pan from oven and place, upside down, on a wire cake rack to cool for 20 minutes. Run a knife around edge of cake to loosen from pan and carefully turn out onto rack.

Cool completely before sprinkling icing sugar (if using to decorate) and serving.
