5 tbsp. extra-virgin olive oil, divided
6 to 8 garlic cloves, peeled and sliced
½ tsp. crushed red pepper or more to taste
½ cup fresh Italian parsley, chopped
1 pound angel hair or thin spaghetti
1 cup Pecorino Romano cheese, grated (optional)

1. Bring a pot of salted water to a boil over high heat.
2. Stir the pasta into the boiling water.
3. Return to a boil, stirring frequently, and cook, semi-covered,
until the pasta is tender but still very firm.
4. Meanwhile, heat 3 tbsp. of the oil in a large skillet over medium heat.
5. Add the garlic and cook, shaking the skillet, until pale and golden, about 2 minutes.
6. Remove from the heat, and add the crushed red pepper.
7. Ladle about 1½ cups of the pasta-cooking water into the sauce, then add
the parsley, the remaining 2 tbsp. of olive oil and salt to taste. Bring to a boil.
8. Drain pasta, place on a serving platter. Pour sauce over pasta. Sprinkle cheese if
desired.
9. Check the seasoning, adding salt and crushed red pepper if necessary.
10. Serve immediately in warm bowls.
 

Aglio, Olio e Alici (Garlic, Oil & Anchovy Sauce)

2-3 garlic cloves, chopped
2 tbsp. olive oil
½ cup olive oil
2 cans flat anchovies
¼ lb. angel hair or thin spaghetti
2 tbsp. capers (optional)

Directions:
Directions:
1. Coat small sauce pan with 2 tbls. olive oil.
2. Sauté garlic and anchovies. Simmer.
3. Break up anchovies with a wooden spoon.
Do NOT burn anchovies.
4. Add ½ cup of olive oil.
5. Add ½ cup water (can use pasta water).
6. Cook pasta according to directions. Drain.
7. Pour enough sauce over pasta.
There will be extra sauce for another serving.
