2 cups chopped spinach leaves
1/2 cup olive or avocado oil
1/4 cup lemon juice
2 T nutritional yeast
3 garlic cloves, minced
2 t sea salt
2 small avocados, chopped (about 2 cups)
3 T red onion, chopped

Directions:
Directions:
In a bowl, toss spinach, 1/4 cup oil, lemon juice, nutritional yeast, garlic and 1 t salt. Set aside for 30 minutes to soften. Once it is soft, drain the spinach (optional to drain)

In a food processor, process the spinach mix until it is broken down. Add avocados and onion and process until smooth. With motor running, slowly add remaining 1.4 cup of oil through the feeding tube until the mix is creamy. Add remaining salt to taste and pulse to blend.
