German Sweet Chocolate Cake Recipe

1 pkg. 4 oz. Bakers German Sweet Chocolate
1/2 c. boiling water 1 c. butter/margarine
2 c. sugar 4 egg yolks
1 tsp. vanilla 2 1/4 c. sifted flour
1 tsp. baking soda 1/2 tsp. salt
1 c. buttermilk 4 egg whites stiffly beaten.
2 1/2 c. cake flour

FROSTING: Coconut Pecan
1 c. evaporated milk
1 1/2 c. sugar
4 slightly beaten large eggs
3/4 c. c. butter
1 1/2 tsp. vanilla
1 pkg Baker Angel Flake coconut (about 2 2/3 c.)
1 1/2 c. chopped pecans

Melt chocolate in boiling water. Cool. Cream butter & sugar until light and fluffy. Add yolks, one at a time, beating well after each addition, until smooth.
Fold in beaten egg whites. Pour into a 9 x 13 in. (or 3- 9 in. round) Bake at 350 degrees for 30-35 min. baking pan, lined on bottom with parchment paper. Cool Frost

Combine evaporated milk, sugar, beaten egg yolks, butter and vanilla. Cook & stir over medium heat until thickened, about 12 minutes.
Add 1/3 c. coconut and 1 c. chopped pecans.
Cool until thick enough to spread, beating occasionally.
Makes 2 1/2 cups.

This recipe came off a package of German Sweet Chocolate.
It is a delicious, moist, light, crowd pleasing cake.
I got the recipe from my Mother. She would make it on special occasions. Daddy was tight on the food budget, so Mom would save money to buy the expensive ingredients when she wanted to make this cake. No margarine for her.
