Crust:
1½ cups graham cracker crumbs
3 Tbsp. butter, melted
2 tsp. mix of cinnamon and sugar

Filling:
3 packages (8 oz.) of cream cheese
1¼ cups sugar
4 eggs
1 pint sour cream
2 Tbsp. cornstarch
1 tsp. vanilla
2 Tbsp. lemon juice

Crust:
Press graham cracker mixture into the bottom of a greased springform pan.

Filling:
In a mixer, cream together the cream cheese and sugar.
Add eggs one at a time, beating well after each addition.
Add the sour cream (just to blend in).
Add the cornstarch and mix well.
Add the vanilla and lemon juice.
Pour the filling into the crust.
Bake at 350º for 1 to 1¼ hours.
Turn off the oven and leave the cheesecake in the oven with the oven door closed for another hour.

[Tip: Best if cooled for several hours, or overnight in the refrigerator before serving.]
