1¼ cups (2½ sticks) butter
¾ cup brown sugar, firmly packed
½ cup sugar
1 egg
1 tsp. vanilla
1½ cups all-purpose flour
1 tsp. baking soda
½ tsp. salt (optional)
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
3 cups oats (quick or old fashioned, uncooked)

Directions:

Heat oven to 375º.
In a mixer, beat butter and sugars until creamy.
Beat in egg and vanilla.
Add combined flour, baking soda, salt, and spices; mix well.
Stir in oats.
Drop by rounded tablespoonfuls onto an ungreased cookie sheet.
Bake for 8 to 9 minutes for a chewy cookie; 10 to 11 minutes for a crisper cookie.
Cool for 1 minute on cookie sheet; remove and cool on wire rack.
