Baked Fish with Breadcrumb Topping


Ingredients:

2 lb. haddock, scrod, hake or tilapia
chopped garlic
salt and pepper
plain breadcrumbs
olive oil
butter
lemon slices to squeeze on fish if desired

Directions:
Directions:
1. Preheat oven to 350. Spray 9" x 13" baking dish with cooking spray.
2. Lay out fish in baking dish.
3. Make slits in fish. Put a few pieces of chopped garlic in slits.
4. Sprinkle a little salt and pepper on fish (not too much as you will use more over breadcrumbs).
5. Spread breadcrumbs to cover fish. Add salt and pepper.
6. Scatter pieces of butter over bread crumbs.
7. Drizzle olive oil over breadcrumbs.
8. Put a little water around fish to help keep fish moist.
9. Bake uncovered until fish is tender about 15 - 20 min.depending on thickness.
10. As water evaporates add a little more to help keep fish moist.
11. Remove from oven and serve. Serve with lemon wedges.

1 clove garlic, chopped
Pastene kitchen ready tomatoes
salt and pepper
oregano
olive oil

Directions:
Directions:
1. Preheat oven to 350 degree. Coat 9" x 13" baking dish with cooking spray.
2. Lay out fish on baking dish. Make slits in fish. Put pieces of garlic in slits.
3. With a fork spread crushed tomatoes over fish. Add a few pieces of garlic on tomatoes.
4. Sprinkle salt, pepper and oregano over tomatoes.
5. Drizzle olive oil over tomatoes. Add a little water around the fish to keep moist.
6. Bake uncovered until fish flakes and is cooked.
7. Remove from oven and serve.

Grandpa learned these fish recipes from Nonna. The second recipe is Fish "Pizza" Style. G'ma prefers the first one with homemade breadcrumbs and G'pa prefers the one with tomato.
