Ingredients: 2 lb. haddock, scrod, hake or tilapia garlic, chopped salt and pepper plain breadcrumbs olive oil butter lemon slices for garnish, if desired

Directions: |
Directions: 1. Preheat oven to 350º. Coat a 9x13 inch baking dish with cooking spray. 2. Lay out fish in baking dish. 3. Make slits in fish. Put a few pieces of chopped garlic in slits. 4. Sprinkle a little salt and pepper on fish, not too much as you will use more over breadcrumbs. 5. Spread breadcrumbs to cover fish. Add salt and pepper. 6. Scatter pieces of butter over bread crumbs and drizzle with olive oil. 7. Add a little water around the edge of the fish to help keep fish moist. 8. Bake uncovered until fish is tender about 15-20 minutes depending on thickness. 9. As water evaporates around the edge, add a little more to help keep fish moist. 10. Remove from oven and serve. Serve with lemon wedges. |

Directions:1. Preheat oven to 350º. Coat a 9x13 inch baking dish with cooking spray. 2. Lay out fish on baking dish. Make slits in fish. Put pieces of chopped garlic in slits. 3. With a fork spread a light topping of crushed tomatoes over fish. 4. Add a few pieces of garlic on tomatoes and sprinkle with salt, pepper and oregano. 5. Drizzle olive oil over tomatoes. Bake uncovered until fish flakes and is cooked. 6. As water evaporates around the edge, add a little more to help keep fish moist. 7. Remove from oven and serve. |

Notes: Grandpa learned these fish recipes from Nonna. The second recipe is Fish "Pizza" Style. Grandma prefers the first one with homemade breadcrumbs and Grandpa prefers the one with tomato.
