Lemon Pie Filling Recipe

2 cups white sugar
cup corn starch
2 cups water
4 egg yolks slightly beaten
cup butter
2 tbsp. lemon zest ( fresh )
⅔ cup lemon juice
3 drops yellow food coloring

Mix: sugar and corn starch in a med. sauce pan
Gradually add water
Cook over med. heat until mixture thicken and comes to a boil
Boil for 1 min.
Gradually stir half the above mixture into the beaten egg yolks.
Blend this mixture into the rest of the hot sugar mixture that is in the sauce pan
Boil and stir for 2 min.
Remove from heat: stir in butter, lemon zest, lemon juice and food coloring
Pour into pre-baked pie crust
