7 egg yolks
1 Cup heavy cream
Cup butter
6 Tbsp dry sherry
2 lb cooked lobster meat
Salt (~ tspn)
1 pinch cayenne
1 pinch nutmeg

Directions:
Directions:
1. In small bowl, whisk together egg yolks and heavy cream until well blended. Set aside.
2. Melt butter in sauce pan. Stir in egg yolk mixture and sherry. Cook until mixture starts to thicken, but do not boil
3. Remove from heat, season with salt, cayenne and nutmeg to taste. Add lobster. Return to heat and cook gently until heated through.
4. Serve hot over buttered toast
