Small head of escarole
3 cans chicken broth
2 cloves garlic
2 Tbsp olive oil
1 Cup water
2 cans white beans, undrained
1 large onion
crushed red pepper
salt & pepper

Directions:
Directions:
1. Cook onion and garlic in large sauce pan in oil.
2. Add chicken broth and water, slowly. Bring to boil and add red pepper and salt to taste.
3. Cut escarole into small pieces and add, along with beans (undrained)
4. Simmer for 45 minutes
