Crepes
1 cup unbleached all - purpose flour
2 tbsp sugar
1 pinch salt
2 eggs
1 1/2 cups milk
1/2 tsp vanilla extract
1 tbsp unsalted butter, melted
softened butter for cooking

Filling:
1 - 500 gram tub of cottage cheese
one egg
2 tbsp sugar

Directions:
Directions:
1. In a bowl, combine the flour, sugar and salt. Whisk in the eggs, milk and vanilla until smooth. Add the melted butter
2. Heat crepe pan over medium heat, brush with butter
3. For each crepe pour about 3 tbsp batter in the center of the skillet and tilt the skillet to spread the batter. When the edges peel easily flip.
4. Mix filling ingredients together.
When all the crepes are cooked line cookie sheet with foil. add 3 tbsp filling to center of crepe and roll.
5. When all the crepes are filled put in preheated oven (350 degrees). Bake for approximately 30 minutes until the egg has cooked. Enjoy with berry compote or maple syrup!

This was a Christmas morning staple. Every Christmas Eve mom was busy making the crepes to speed up assembly the next morning.
