3 lbs+ boneless Chuck, English or Arm roast
Carrots
Onion, quarters
Potatoes
Flour
Water
Salt & pepper

Directions:
Directions:
1. Preheat oven to 325º
2. Cover roast in flour and pound with the back of a large knife
3. Heat 2 Tbsp oil in cast iron or heavy pan; sear roast on both sides
4. Place roast in roasting pan with potatoes, onion and carrots and add water. Cover
5. Bake for 3½-4 hours. Add more water halfway through. Uncover for the last 15 minutes and baste
