3 egg yolks
1 Tbsp. lemon juice
tsp. salt
dash of red pepper
cup (1 stick) butter

Directions:
Directions:
In a blender, mix egg yolks, lemon juice, salt, and red pepper.
Cover and process for a few seconds until smooth.
Heat butter until bubbly, but not browned.
Slowly pour hot butter into the mixture in a steady stream with the blender on a low speed.
Process for a few seconds longer, if necessary to thicken the sauce.
Refrigerate if not using immediately.
