Cinnamon Rolls Recipe

½ Cup shortening
1 Cup hot water
1 ½ tsp salt
½ Cup sugar
6 Cups flour
2 eggs
2 envelopes dry yeast dissolved in one cup lukewarm water to which you have added 1 Tbsp sugar

Directions:
Directions:
1. In a large bowl, combine hot water, shortening, sugar and salt. Let cool and add yeast water mix. Beat well with a wire whisk.
2. Add 3 cups of the flour and 2 beaten eggs. Beat hard. Beat in three remaining cups of flour. Cover with saran wrap and place in refrigerator for at least three hours or overnight.
3. In the morning, take a large ball - about ⅓ of the dough - and, with floured hands, pat out on a floured board into sort of a rectangle. Sprinkle with 3-4 Tbsp of brown sugar, a generous sprinkle of cinnamon and dot with 3-4 Tbsp of butter. Spread all over dough. Roll up and cut into slices. Place in a buttered 13x9 dish, cover with tea towel or saran, and let rise in a warm place until light - at least one hour.
4. Bake at 350º for about twenty minutes. While baking, make an icing of confectioners sugar with a little mil and vanilla. Drizzle over warm rolls.
5. Remaining dough will keep in the fridge for several days, and can be made into a batch of dinner rolls

We always had warm cinnamon rolls on Christmas morning. Mom also made a batch for Mrs. Testa, our next door neighbor on Madison St., who brought over biscotti. And then we'd have dinner rolls at the table for our holiday meals.
