Ingredients: 6 cups all purpose flour 3 ½ tsp salt 1 tsp active dry yeast 3 cups water room temperature

Directions:1. In a big bowl mix the flour, salt, and yeast together. Pour water into the bowl and mix with a spatula or wooden spoon until well incorporated.
2. Cover the bowl with plastic wrap and rise for 12-18 hours
3. Preheat oven to 450ºF. Add your 6 qt cast iron pot to the oven as it’s heating and heat it as well until it’s at 450 degrees F. Remove the pot from the oven and remove the lid from it. Use oven mitts.
4. Spray a spatula with cooking spray and use it to turn your dough out onto a piece of parchment paper. Transfer the parchment paper and dough to your heated cast iron pot. Place the lid on your pot.
5. Bake the bread for 40 minutes with the lid on, then remove the lid and bake for another 10-15 minutes until golden brown. Use the parchment paper to remove the bread from the pot. Brush with butter (+ garlic salt if wanted). Let cool prior to serving. |

Notes: This recipe can be cut in half and baked in a 3.5 or 4 quart pot. Bake with the lid on for 30 minutes and then remove lid and bake for another 10-15 minutes.
