1 lb organic pork, sliced thinly (like for stir fry)
8 cups water
5 tbsp gluten free soy sauce
4 organic chicken bouillon cubes
15 dried shiitake mushrooms (or fresh)
1 500ml can sliced bamboo shoots (drained)
1 398ml can baby corn (drained & cut up)
2 cups bean curd, sliced thinly
4 tbsp white vinegar
2 tbsp water
1 tbsp corn starch
2 Free range eggs, beaten
1 green onion, sliced thinly
3 tsp sesame oil
Sea salt and freshly cracked black pepper to taste

Directions:
Directions:
Bring 8 cups of water to boil in Dutch oven
Add the pork, soy sauce, bouillon cubes & mushrooms.
Boil for 10 mins, skimming off the crud that comes to the top
Mix together the corn starch with 2 tbsp water in a small bowl and set aside
Add the bamboo shoot, baby corn and bean curd
Add the vinegar, salt & black pepper
Add the eggs slowly while stirring the pot
Add the corn starch mixture, sesame oil and green onion.
Mix well, remove from heat, cover and let sit for 10 minutes

My siblings and I all loved this soup as kids and, as young adults...it would help our hangovers.
