Mushroom and Bacon Risotto Recipe

Ingredients: 4-5 slices of bacon diced 1 medium onion finely chopped 8 oz mushrooms (any kind, but a mixture of different kinds is best!) 1.5 c arborio rice 1/2 c white wine 5 cups chicken broth 1/2 c parmesan cheese

Directions: |
Directions:cook bacon in a large pot until crisp
at medium heat, add the onion and cook in the bacon fat until translucent**
add the mushroom and cook a couple more minutes
add the rice and stir until it's thoroughly coated with the oils from the pot
deglaze pot with white wine and let it simmer down for a couple minutes
add one cup of chicken broth and bring it to a simmer while stirring slowly
once the rice absorbs most of the broth, add another cup and continue stirring
continue to add one cup of broth at a time while stirring slowly until each cup is absorbed into the rice
remove from heat and stir in parmesan immediately |

Notes: **(alternatively: one could drain the bacon fat, add olive oil, and cook the onion in that)
It is imperative to stir slowly but constantly from beginning to end! This keeps the rice from sticking to the bottom and it creates that creamy texture.
