- 4 Walleye Fillets - 2 cups of Keebler Club Crackers crumbs - 2 eggs - Canola Oil - salt

Directions:- Dry fillets with paper towels and cut each fillet into 3 pieces - Crush crackers with a rolling pin fairly fine inside a gallon zip-lock bag (do not use a food processor --too fine) - Whip two eggs for an egg wash - Dip the walleye pieces into the egg wash and then into the cracker crumbs, coating each piece lightly but totally - Place each piece on a tray or platter - Place oil in a frying pan approx. 1 inch deep (or fry cooker if desired) -Test the temp of oil by dropping a few crumbs in oil. (should bubble up immediately if oil is ready. - Oil should be in the 350 to 375 degree range (Too low and fish will be greasy) (Too high and fish will burn) - Place the coated pieces of fish into the hot oil for several minutes until the underside is light brown. then turn and cook for several minutes longer - When fish is done, remove from pan and place on a paper towel covered plate and salt to taste |

Notes: When you talk about eating fish, fried fish is probably the first thing that comes to mind. When it comes to fried fish, everyone had their favorite coating or crumbs. After owning a lake cabin in Minnesota for 30 years and making many trips to Canada and deep sea fishing in Florida, I've tried about every recipe coating imaginable. But the one I've settled on is probably the simplest---and the "Best". The Club Cracker crumb coating is light and gives a sweet buttery taste, but does not hide the taste of the fish. Enjoy!
