chicken breasts
eggs
flour
seasoned panko breadcrumbs
olive oil
salt and pepper

Directions:
Directions:
1. Mix flour, salt and pepper on a plate
2. Beat eggs and water in pie plate
3. Pour breadcrumbs onto plate
4. Split chicken breast or pound out to make thinner
5. Dredge chicken pieces in flour
6. Dip in eggs
7. Cover in breadcrumbs
8. Put on cookie sheet covered in wax paper and refrigerate at least 1 hour
9. Spray baking pan with olive oil spray and lay chicken pieces flat. Drizzle with olive oil
10. Bake at 375 for 20-25 minutes

Serve with mashed potatoes and corn. Or you can add mozzarella and pasta sauce on top for chicken parmesan
Can also used crushed cereal instead of bread crumbs (cornflakes, captain crunch, Chex)
