3 large eggs
1 cup vegetable oil
3 cups sugar
2 t vanilla
2 cups zucchini, grated
3 cups flour
1 t baking soda
1 t salt
1/4 t baking powder
3 t cinnamon
1 cup chopped nuts, optional

Directions:
Directions:
Preheat oven to 350º.
Coat 2 loaf pans with cooking spray.
Beat together eggs, oil, sugar and vanilla until light and fluffy.
In separate bowl, mix flour, baking soda, salt, baking powder and cinnamon with a whisk.
Add dry ingredients into wet ingredients.
Add nuts if desired.
Pour batter into 2 loaf pans.
Bake 50-60 minutes.
Cool 10 minutes, then remove loaves from pan.
