1 ¼ cups packed brown sugar
¼ cup cold water
2 egg whites
2 tsp light corn syrup or ¼ tsp cream of tartar
Dash of salt
1 tsp vanilla

Directions:
Directions:
In the top of a double boiler combine sugar, cold water, egg whites, corn syrup (or cream of tartar) and a dash of salt. Beat 30 seconds with mixer on low speed. Place over boiling water (upper pan should not touch water). Cook about 7 minutes while beating constantly on high speed of electric mixer or until frosting forms stiff peaks. Remove from heat. Add vanilla. Beat 2-3 minutes more or until spreading consistency.

Alternate: Instead of brown sugar use 1 ½ cups granulated sugar with ⅓ water instead of the ¼ cup water.

Peppermint-stick frosting: use ¼ tsp peppermint extract instead of vanilla extract

I did not use this icing very often. I used the one given to me at my cake decorating class, which will be in here. I wanted to include this one since it is in the picture of the cake.
