1 pound ground beef (93% lean)
1 jalapeno pepper, seeded and diced
4 oz whipped cream cheese
8 taco sized flour tortillas (or 4 large burrito sized)
2 cups enchilada sauce
8 oz shredded cheese blend

Instructions
Add ground beef and diced jalapeņo to skillet and cook while breaking apart with spatula until beef is cooked through and jalapeņo is tender
Stir in cream cheese until smooth, stir in about 1/4 cup enchilada sauce and remove from heat
Add 1/2 - 1 cup enchilada sauce in bottom of casserole dish
Divide filling among tortillas and add to casserole dish seam side down
Top with remaining sauce and shredded cheese
Bake at 350 degrees for 20 minutes until heated through and cheese has melted
