2 T butter
1 cup celery, diced
3 small onions, diced
2 T cider vinegar
1 t lemon juice
1/2 t salt
2 T brown sugar
1 cup ketchup
2 T Worcestershire sauce
1 cup gravy (store bought or from cooking roast)
2 pound pot roast, cooked and shredded
8 hamburger buns

Directions:

Sauté celery and onion in butter.
Add all other ingredients except for the meat and simmer until vegetables are tender.
Add shredded meat.
Best made a day ahead of serving.
Serve on buns.

Add 1/2 - 1 teaspoon of ground chipotle pepper for a little kick.
Try it with a few sliced pickles on the bun.
This reminds me of our annual ski trips with the Jarvie's and Wally. There was nothing better to have after a day on the slopes than sloppy, hot Beef Barbecue!
