large butternut squash cut into 3/4 " chunks
2 T olive oil
2 T butter
1 T rice vinegar
3 T white miso paste

Directions:
Directions:
Mix squash with olive oil and roast until brown/ Add butter and crush squash-don't mash. Then stir in vinegar and miso, salt & pepper.
