red beets
water
vinegar
sugar
pickling spice
salt

Directions:
Directions:
Wash beets. Cover with water and cook until firm (so fork goes in). Drain. Put in cold water. Peel and cut beets (do not cut stems too close or beets will bleed out). Put in large pot and cover with half vinegar and half water. Put pickling spice in cheese cloth and cook with beets. Sugar to taste (about 2 cups sugar to large pot or 1 1/4 cups sugar for small pot). Bring almost to boil.

Heat jars and lids. Fill jar and put 1 tsp. salt in each jar.
