Chicken Soup Recipe

2 carrots chopped
2 celery stalks chopped
1 onion chopped
3 cloves garlic minced
1 chicken breast or 2 thighs
1 tbs olive oil
8 cups chicken stock
1/2 tsp salt
1/2 tsp pepper
1 tsp thyme
1/2 tsp cumin
1/2 tsp sage
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbs parsley
1 cup cooked rice, or pasta, or dumplings see recipe below

In instant pot stir fry onion, carrot, celery and garlic. Then add chicken and stir fry for 3 or 4 minutes. Add stock and herbs and seasoning and stir. Set instant pot to 15 minutes using soup or pressure cook setting. When done add in your choice of rice, pasta or dumplings. For dumplings mix 1/2 cup flour and 1/2 cup yogurt and add a dash of salt, 1/2 tsp sugar, optional. Mix and drop by 1/2 tsp into broth that is set to saute and cook for 5 to 10 minutes.
