1 lb. baby carrots
1 cup water
1½ Tbsp. butter
1 Tbsp. brown sugar
1 Tbsp. Dijon mustard
1 tsp. kosher salt (Tip: If cooking fewer carrots for fewer servings, cut salt to ½ tsp.)
½ tsp. coarse black pepper (Tip: If cooking fewer carrots for fewer servings, cut pepper to ¼ tsp.)
1 Tbsp. fresh parsley, chopped (optional)

Directions:
In a medium saucepan, add water and bring to a boil. Add the carrots, cover with a lid, and reduce heat to medium-high.
Cook the carrots until tender, about 8 minutes.
Remove from heat and drain.
Return carrots to saucepan and set over medium heat.
Add the butter, brown sugar, mustard, salt, and pepper and gently stir, allowing the butter to melt, and ingredients to combine.
Toss gently to coat carrots.
Remove from heat and sprinkle with chopped parsley for garnish, if desired.
