Potato Dumplings Recipe

2 cups grated raw potatoes
1 raw onion grated
1 egg
1 tsp salt
1/2 tsp pepper
2 cups flour divided
1/4 lb salt pork cubed or strips
dash of nutmeg (optional)

Directions:
Directions:
Fry salt pork about 10 minutes. Mix raw potato, onion, egg, salt and pepper together. Mix in 1 cup of flour. Put 1 cup of flour on a pastry board and knead with the dough to absorb flour. Make into approx 12 balls. Press your finger in and place piece of salt pork in and close up. Roll in flour and cook in boiling water until done, approximately 20 to 30 minutes. Serve with butter.
