4 boneless, skinless chicken breasts
1/4 c chicken stock
2 Tbsp lemon juice
2 cloves garlic minced
1 tsp cumin
1/2 tsp coriander
1/4 tsp pepper
salt to taste (about 1/2 tsp)
4 8" flour tortillas
2 Tbsp vegetable oil
1 onion, thinly sliced
1 or 2 red pepper cut in thin strips
optional garnishes - lettuce, grated cheese, salsa, guacamole or avocado

Directions:

slice chicken into thin strips (this is easiest if done when the chicken is slightly frozen)
Mix marinade ingredients and soak chicken in this for 1-4 hours if there is time.
Saute onions and red peppers for 5-10 minutes, then set aside.
Cook chicken stips and marinade until fully cooked, likely 10-15 minutes
Heat tortillas in microwave or in oven.

To serve place garnishes in bowls, and let people make their own fajitas to taste.

If you wish you can use prepackaged seasoning instead of marinade

This is an easy and popular recipe. A lot of fun when you get to make your fajita just the way you like it. Can use beef, black beans as alternatives to chicken. Omit the oil to save calories if using non-stick pans.
