Sweet Potato Vegan Muffins Recipe

2 cups whole wheat flour or any whole grain flour
1/2 cup brown sugar or 3/4 date paste (I use 1/3 cup brown sugar)
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 TBL cinnamon
1 cup cooked sweet potatoes (I bake mine)
1 cup applesauce
1 cup vanilla soy milk or any plant milk
1 TBL apple cider vinegar
1 cup raisins (I use ½ cup)
¼ cup chopped walnuts (optional)
2 TBL ground flax seeds (optional but I like them)

Directions:

Preheat oven to 350º

Combine all dry ingredients in large bowl and whisk together, flour, sugar, baking powder, baking soda, salt and cinnamon.

Stir together apple sauce, milk and vinegar in another bowl.

Peel sweet potatoes and mash with a potato masher until softened (if you bake them they'll already be soft).

Add mashed potatoes to heh applesauce/milk/vinegar mixture and whisk together well.

Combine the dry mixture to the wet mixture and toss in the raisins and walnuts (if using).

Spoon into 24 muffin pans and bake for 25 min or until toothpick comes out clean.

These are a great mid morning or afternoon snack. Also good for breakfast with jam, peanut butter or honey on them. Last time I made them I only got 17 muffins. So don't go by the 24 amount.
