7 Ounces Semisweet Chocolate
1 1/2 Cups plus 1 T. Flour
1 1/4 Teas. Ground Ginger
1 Teas. Ground Cinnamon
1/4 Teas. Ground Cloves
1/4 Teas. Ground Nutmeg
1 T. Cocoa Powder
1/2 Cup Butter
1 T. Freshly Grated Ginger
1/2 Cup Dark-Brown Sugar, Packed
1/4 Cup Molasses
1 Teas. Baking Soda
1/4 Cup Granulated Sugar

In medium bowl, sift together flour, ginger, cinnamon, cloves, nutmeg and cocoa - set aside.
Combine butter and grated ginger until whitened - about 4 minutes. Add brown sugar; beat until combined. Add molasses and beat until combined.
In small bowl, dissolve baking soda in 1 1/2 teaspoons boiling water. Pour in bowl along with the flour mixture. Mix in chocolate chips or chunks. Turn out onto a piece of plastic wrap. Pat dough out to about 1 inch think. Seal wrap and refrigerate until firm - about 2 hours.
Heat oven to 325º. Roll dough into 1 1/2 inch balls, roll in sugar and place 2 inches apart on cookie sheet. Bake until surface cracks slightly - about 10-12 minutes.

Grandma P did not use fresh ginger, just added 1 teaspoon ground ginger. They were just as good.
