8 roma (plum) tomatoes
1/3 cup chopped fresh basil
1/4 cup shredded Parmesan cheese
2 cloves garlic, minced
1 TBL balsamic vinegar
1 tsp olive oil
1/4 salt
1/4 tsp fresh ground pepper
1 loaf french bread, sliced and toasted

Directions:
In a bowl, toss together the tomatoes, basil, Parmesan cheese and garlic. Mix in the balsamic venegar, olive oil, kosher salt and pepper. Serve on toasted bread slices.

When I make this I simplify it. I slice the bread and toast in the oven. Then I put a slice of mozzarella cheese on the bread, a basil leaf, a slice of tomato, salt and pepper. Then I simply pour the balsamic vinegar over them and then drizzle the olive oil on them. What I like about this is that you can make them any way you like. Some family members don't like tomatoes so you can leave them off of some. You can add whatever you like, even shrimp. Get creative!!
