7 eggs, separated
2¼ c. sifted flour
1½ c. sugar
3 t. baking powder
1 t. salt
½ c. oil
1 t. vanilla
1 t. maple extract
⅔ c. chopped walnuts
½ t. cream of tarter

Directions:
Directions:
About one hour before using, remove eggs from refrigerator, then separate. In a large bowl, place flour, sugar, baking powder, salt, oil, ¾ c. cold water, egg yokes and extracts; beat until mixture is smooth. Stir in walnuts. In a large bowl, beat egg whites for a moment at high speed. Add cream of tartar then continue beating until egg whites are very stiff. Gently fold stiffly beaten egg whites into batter. Pour batter into ungreased 4 inch deep, 10 inch tube pan. Bake at 325º for 55 minutes, then increase heat to 350º and bake 20 minutes longer. Test cake by gently pressing top. If cake does not spring back, bake an additional 5 minutes. Cool before removing from pan.
