2 lbs ground beef, browned & drained
1/2 to 1 cup restaurant style salsa or
1 pkg taco seasoning and 3/4 cup water

4 lg potatoes, boiled, drained, mashed
1/2 cup half/half or milk
1 stick of salted butter, melted
1/2 tsp salt
1/4 tsp black pepper
1 cup grated cheddar cheese
1 cup grated pepper jack cheese

Preheat the oven to 375º.

In a large oven safe skillet, combine cooked ground beef and salsa, or taco seasoning mixed with water, and allow to simmer until most of the moisture has evaporated.

In a stand mixer, combine cooked potatoes, melted butter, half/half, salt and pepper. Blend until completely smooth. Spread evenly over the top of the ground beef.

Top with grated cheese. Bake for 30 minutes and cheese is melted and slightly browned.
