Salmon - 6-8 oz. per person or about 1 lb. Filet for 2 people. Fresh is best.

Arrange salmon skin side down on foil lined baking sheet. Brush with olive oil and sprinkle with salt and pepper. Brush on approx. 1 tsp. Of Dijon mustard (or mustard of your choice) and approx. 2 tsp. of lemon juice. Sprinkle with fresh or dried dill). Let stand for at least 5 - 10 minutes.

Roast in 425º oven for 10 to 14 minutes depending on thickness. Salmon should flake easily when pulled apart gently with a fork. TRY not to overcook.
