Chocolate Cookies Recipe

Chocolate Walnut Biscotti

1⅓ cups walnuts, chopped
2 (1oz.) squares unsweetened baking chocolate
11 tsp. unsalted butter
1⅓ cups all purpose flour
1⅓ tsp. baking powder
2 large eggs
⅔ cup sugar
1 tsp vanilla extract
6 oz. semi-sweet chocolate morsels
1 tbsp. crisco

1. Preheat oven to 350. On baking sheet lined with parchment paper
toast walnuts 10 minutes. Set aside.
2. Melt chocolate and butter slowly in microwave. Let cool.
3. In small bowl whisk the flour and baking powder. Set aside.
4. In large bowl beat eggs lightly. Gradually add sugar and vanilla, beating until light and fluffy.
5. Stir in cooled chocolate mixture and flour mixture until well blended.
6. Stir in walnuts. Divide dough in thirds. Wrap in plastic and chill at least 1 hour.
7. Form each dough third into a log. Place on baking sheet. Bake 20 - 25 minutes.
8. Let cool on rack. Melt chocolate morsels and crisco in Wilton melting machine.
9. Dip or frost half of biscotti with melted chocolate. Let dry on rack.

Chocolate Truffle Cookies

2 (1oz.) squares unsweetened baking chocolate
1 cup (6oz.) semisweet chocolate morsels, divided
2 1/3 tbsp. butter
1 1/2 egg
1/2 cup sugar
3/4 tsp. vanilla extract
1/4 cup flour
1 tbsp. cocoa
1/2 tsp. baking powder
1/2 tsp. salt

1. Preheat oven to 350 degrees. Ungreased baking sheet - no parchment paper.
2. In microwave melt unsweetened chocolate, 1/2 cup morsels and butter. Cool for 10 minutes.
3. In a mixing bowl, beat sugar and eggs for 2 minutes.
4. Beat in vanilla and chocolate mixture.
5. Whisk flour, cocoa, baking powder and salt. Beat into chocolate mixture.
6. Stir in remaining 1/2 cup chocolate morsels. Cover and chill for 3 hours.
7. Remove half of dough. With lightly floured hands, roll into 1 in. balls.
8. Place on baking sheet and bake 10 - 12 minutes until lightly puffed and set.
9. Cool on pan 3 - 4 minutes before removing to wire rack to cool completely.
10. Repeat with remaining dough. Dust with confectioners' sugar.
