1 cup (8oz.) Nutella
1 large egg
¼ cup chocolate chips

Directions:

1. Preheat oven to 350º. Line a baking sheet with parchment paper.
2. Add the Nutella, flour and egg to a large bowl. Mix until well combined.
3. The mixture will form a thick dough but should be moist enough to roll into balls.
4. Using your hands roll about 2 tbsp. of dough into balls. Place on baking sheet.
5. With the bottom of a glass or your fingertips flatten them slightly.
6. Bake for 8-10 minutes, until they are cooked around the edges and still slightly
soft in the middle.
7. Let the cookies sit on the baking sheet for 5 minutes. Cool on baking rack.
 

Chocolate Truffle Cookies

2 (1oz.) squares unsweetened baking chocolate
1 cup (6oz.) semisweet chocolate morsels, divided
2⅓ tbsp. butter
1½ egg
½ cup sugar
¾ tsp. vanilla extract
¼ cup flour
1 tbsp. cocoa
½ tsp. baking powder
½ tsp. salt

1. Preheat oven to 350º. Use ungreased baking sheet - no parchment paper.
2. In microwave melt baking chocolate, ½ cup morsels and butter. Cool for 10 minutes.
3. In a mixing bowl, beat sugar and eggs for 2 minutes.
4. Beat in vanilla and chocolate mixture.
5. Whisk flour, cocoa, baking powder and salt. Beat into chocolate mixture.
6. Stir in remaining ½ cup chocolate morsels. Cover and chill for 3 hours.
7. Remove half of dough. With lightly floured hands, roll into 1 inch balls.
8. Place on baking sheet and bake 10-12 minutes until lightly puffed and set.
9. Cool on pan 3-4 minutes before removing to wire rack to cool completely.
10. Repeat with remaining dough. Dust with confectioners' sugar.

A favorite cookie of Nicholas is the Chocolate Nutella Cookie. Made with just four ingredients, it is the most delicious soft and chewy cookie with the rich luxurious flavor of hazelnut. Even better, Sara bakes them for him. The Chocolate Truffle cookie was in the selection of Christmas cookies that Michele gave us to sample. They are soft, rich and chocolaty.
