1 1/2 to 2 lbs. chicken breast (boneless & skinless) sliced thin
2 T olive oil (see alternate cooking method)
Sauce:
2 cups heavy cream
1 cup chicken broth
2 tsp. garlic powder
2 tsp. Italian seasoning
1 cup grated parmesan cheese
1 cup spinach, chopped
1/2 cup sun dried tomatoes

Directions:
Directions:
In a large skillet cook sliced chicken in olive oil until no longer pink in center. Remove from pan and set aside.
Add cream, broth, seasonings and parmesan cheese to skillet and whisk until it starts to thicken.
Add spinach and sundried tomatoes, simmer until spinach starts to wilt.
Add chicken to mixture. Serve with pasta or rice as desired.

Alternate cooking method: Cut raw chicken into large chunks. Place in crockpot, cover with water. Cook until tender. Remove from crockpot and cut into small chunks and add to sauce. I season the water with garlic and Italian seasoning
