4 T. extra virgin olive oil
1 (6 oz.) bag baby spinach leaves
1 cup crumbled feta cheese
¾ cup sour cream
1 tsp. minced garlic
½ tsp. grated lemon peel
Purchased breadsticks
Assorted vegetables

Directions:
Heat 1 T. oil in heavy large skillet over medium high heat. Add spinach; toss until wilted, but still bright green (3 minutes). Transfer to sieve; press out excess liquid. Turn out spinach onto work surface & chop coarsely. Combine 3 T. oil, feta, sour cream, garlic & lemon peel in processor; blend until smooth. Transfer to bowl. Mix in spinach. Season with salt & pepper. Cover. Bring to room temperature before serving. Serve with breadsticks & vegetables.
