3 cups cooked, peeled and mashed sweet potato's or yams.
2 eggs
1 stick butter melted.
1 cup sugar
1/2 cup milk



Topping:
1 stick butter
1 cup brown sugar
1 t. vanilla
1/2 cup flour
1/2 cup chopped pecans

Directions:
Directions:
Mix together the casserole ingredients in a bowl. You can do by hand for a lumpier texture or use an electric mixer on low.
Spread evenly on bottom of a baking dish.

In a small pan on stovetop, melt butter, on low heat and then add the brown sugar and mix well.
Add vanilla and flour.
Keep mixing constantly with spoon on medium heat as it comes to a slow bubbling boil.
It will continue to thicken and caramelize.
Be careful not to cook too long as it may scorch and burn.
Once it has a consistency of soft caramel, pour slowly over top of casserole and spread with spatula.

Sprinkle chopped pecans over top.

Bake at 350 degrees for 20 minutes.


Can be made the day before and baked on the following day.
