4 - 5 Scallops Per Person
Olive Oil
Kosher Salt
Fresh Black Pepper
1 large clove of garlic, minced
1 1/2 Tbs minced shallots or scallions
A handful of fresh parsley, minced

Directions:
Directions:
Dry the scallops very well and spread on a paper towel over parchment paper. Toss with a sprinkling of salt and pepper.

Set a NON-STICK skillet over high heat and add the olive oil. When thoroughly hot, add the scallops and brown. Turn and sear other side.

Once the scallops have been browned on one side and turned, toss in the minced garlic & shallots. Give several tosses to cook the trimmings; finally add and toss with the parsley.

The scallops should just feel lightly springy to the touch and the whole operation should take no more that 3 - 4 minutes.
