1 1⁄2 lbs. salmon steaks or fillets

MARINADE
2 T. lemon juice (one lemon)
2 T. lime juice (one lime)
3 garlic cloves, minced
1 tsp. salt
3 T olive oil
1 tsp. ground pepper
3 tsp. Cajun seasoning

Directions:

Put salmon in a plastic bag.

Mixed up all the marinade ingredients in a bowl and pour into the bag with the salmon. Shake and refrigerate for one hour.

Pre-heat grill to very hot.

Grill salmon skin-side-down for 3-4 minutes. Flip and grill for another 3-4 minutes or until it reaches the preferred doneness. (I like it cooked until all the red is gone.)

This is the best salmon recipe I have ever tasted. I don't much like cooked fish. But this has a texture like a juicy pork chop and a remarkable non-fishy taste.
