Jewel's Shrimp Paella Recipe

1-2 packages Large frozen shrimp peeled, deveined, and tail off
1 large boneless skinless chicken breast
2 Tofurkey sausages or 2 Italian sausages sliced into small bite-sized pieces
3 Tbsp. olive oil
1 large onion finely chopped
3 Tbsp. minced garlic
1 pkg Goya yellow rice or Goyo yellow rice
3/4 to 1 jar sliced green olives with pimentos divided
1 jar pimentos drained
1 3/4 cup water
1 package frozen corn (optional)

Directions:
Heat oil over medium heat in large skillet
Add onions and garlic and saute until starting to turn darker color
Add tofurkey or sausage and chicken cook until done add 1 3/4 c water
Bring to a boil stirring in contents of rice package and 1/2 olives
Reduce heat to medium-low cover and simmer 12-18 minutes
Add shrimp simmer until shrimp and rice are done and water is absorbed about 18 - 25 minutes adding frozen corn, half way through.
Once timer goes off add remainder of olives and pimentos stir to mix well serve with broccoli, green beans or any vegetable

I saw a dish and tried to recreate it, I didn't quite get it exactly as it tasted when my friends mother made it, but what I came up with is pretty tasty! This is also the first dish that I had cooked for Melissa one winter's eve as we were becoming good friends.
