¼ c. dry mustard
½ c. white wine vinegar
⅓ c. light brown sugar
1 can consummé soup
4 egg yokes
pinch of salt
cornstarch as needed

After removing from heat:
¼ lb butter

Directions:
Directions:
Put it all in a pot over medium heat. Beat constantly with a hand beater.

Add ½-tsp cornstarch if the sauce isn't thickening. Heat until just before a boil; do not allow it to boil. Remove from heat and beat in butter immediately.

Slightly less mustard and more sugar may be preferred.
