1 lb spaghetti pasta cooked as directed (Al-dente is best) keeping 3-4 T of water after cooking

Fresh:
Basil about 3-5 good-sized leaves chopped
oregano 2 leaves chopped
OPTIONAL:
sage 2-4 leaves chopped
Thyme The leaves of 1- 2 sprigs


41/2 T olive oil divided by 3 T, 1 T., & 1/2 T
1 to 11/2 T minced garlic
1 medium Vidalia onion chopped
1 medium squash sliced & quartered
1 medium zucchini sliced & quartered
1 carrot sliced diagonally
1/2 rib celery sliced (OPTIONAL)
1 can diced tomatoes (drained)
4-5 Cups spinach

If you want to make this an entree add 2 boneless/skinless chicken breasts rinsed, patted dry and cubed into bite sized pieces fully cooked and seasoned to taste.

1) Cook pasta and set aside adding 1/2 T olive oil to keep the pasta from sticking
2) Sauté garlic over medium-low to medium heat (not cooking too fast) in 3 T. olive oil until the garlic just turns a slightly darker color then add onion and continue to saute until tender.
3) Add carrot slices for 1 to 2 min, add squash, zucchini, and stir fry with 1 T of remaining olive oil
4) Slowly add spinach cooking it down with pasta water (as needed) that was set aside
5) Mix stir-fried and sauteed vegetables together and add to pasta, then toss to mix thoroughly
6) Add salt and pepper to taste

Option:
Add chicken if you would like this to be the main dish.

I was hungry for pasta one day and I did not want a heavy sauce on it, since it was harvest time, I used ingredients from a friend's garden to make this recipe. I made the recipe up with the garden vegetables and herbs as I went and it was GREAT!

Now, whenever I have a taste for something similar, I add and take away ingredients according to the ingredients in my pantry, but the main three ingredients I keep are the pasta, basil, and oregano besides the olive oil.

To add a little tang to this recipe you can add some Italian dressing. This additive is not my favorite, but I have a friend who swears by it.
