A 12 muffin cup pan
6 fresh eggs
1/2 chopped cooked onion
Cubed ham or prosciutto-
1 cup chopped up spinach or Swiss chard or broccoli -parboiled
1 cup Shredded mozzarella cheese
Salt and pepper to taste

Directions:

Turn convection oven to 375 degrees F
Spray muffin pan with olive oil
Mix the eggs well
Add the cooked ingredients to the eggs
Pour by ladlefuls in the muffin tin
Bake for 20 minutes until lightly browned on top
Enjoy!

I was always on a diet especially protein. I’m also anaphylactic to peanuts and tree nuts .
When I attended school meetings food served was carb laden and contained peanuts/nuts.
So I would bring this treat. But I would make batches of 24 to 36.
They were a big hit and the first to finish.
Now I notice that you can buy them in the grocery freezer section.
