Double Pie Crust:
3 cups all purpose flour
2 tbsp sugar
1 tsp salt
1 3/4 sticks (14 tbsp) unsalted butter; chilled and cut into 1/2" pieces
1 tsp fresh lemon juice or white vinegar
6-8 tbsp ice water, as needed

Apple Filling:
4 tbsp butter
3 1/2 pound firm cooking apples such as Braeburn, Granny Smith, Jonathan or Rome Beauty, peeled and sliced
1/2 pound soft cooking apples such as Cortland, Empire, McIntosh, peeled and sliced
1/2 cup sugar
1 tsp fresh lemon juice
1/2 tsp ground cinnamon

Glaze:
1 egg beaten with 1 tbsp water
2 tsp sugar

1 Prepare pastry. Form dough into two disks,.
2. To make filling, heat butter in large skillet over medium high heat. Add apple slices, sugar, lemon juice and cinnamon. When apples start to sizzle, reduce heat to medium low and cover pan. Cook apples until softened and juices are released, 8 to 10 minutes. Uncover. Increase heat to medium high and cook, stirring frequently, until softer apples start to fall apart and apple juice thicken, about 5 minutes. Transfer to a jelly roll pan and refrigerate until apples reach room temperature.
3. Roll out dough to line a 9" pie pan. Spoon cooled apples into crust. Roll out second dough disk. Lay over fruit, trim pastry and make a decorative edge. Cut 4 steam vents. Brush pasty with egg wash and sprinkle with sugar. Freeze pie for 15 minute to relax dough.
4. Adjust oven rack to lowest position. Heat oven to 450. Bake pie 15 minutes. Reduce oven temperature to 350 and continue baking 45 to 50 minutes, or until crust is golden brown and juices are bubbling. Check pie after 30 minutes. If edges are browning too quickly, cover loosely with foil.
5. Transfer pie to rack to cool slightly. Serve warm.

This is also a great pie! This pie incorporates two key concepts that are pre-requisites for amazing apple pies - (1) a mixture of different types of apples and (2) cooking apples in advance of the pie baking to fully release their juices. This pie takes a little more effort but it is a very good apple pie.
