Double Pie Crust:
3 cups all purpose flour
2 T. sugar
1 tsp. salt
14 T. unsalted butter; chilled, cut into ½" pieces
1 tsp. fresh lemon juice or white vinegar
6-8 T. ice water, as needed
Apple Filling:
4 T. butter
3½ lb. firm cooking apples (Braeburn, Granny Smith, Jonathan or Rome Beauty), peeled & sliced
½ lb. soft cooking apples such as Cortland, Empire, McIntosh, peeled & sliced
½ cup sugar
1 tsp. fresh lemon juice
½ tsp. ground cinnamon
Glaze:
1 egg beaten with 1 T. water
2 tsp. sugar

Prepare pastry. Form dough into two disks. To make filling, heat butter in large skillet over medium high heat. Add apple slices, sugar, lemon juice & cinnamon. When apples start to sizzle, reduce heat to medium low & cover. Cook apples until softened & juices are released (8-10 minutes). Uncover. Increase heat to medium high. Cook, stirring frequently, until softer apples start to fall apart & apple juice thickens (5 minutes). Transfer to a jelly roll pan. Refrigerate to room temperature. Roll out dough to line a 9" pie pan. Spoon cooled apples into crust. Roll out second dough disk. Lay over fruit, trim pastry & make a decorative edge. Cut 4 steam vents. Brush pasty with egg wash & sprinkle with sugar. Freeze pie 15 minutes to relax dough. Adjust oven rack to lowest position. Heat oven to 450º. Bake pie 15 minutes. Reduce oven temperature to 350º. Continue baking 45-50 minutes until crust is golden brown & juices are bubbling. Check pie after 30 minutes. If edges are browning too quickly, cover loosely with foil. Transfer pie to rack to cool slightly. Serve warm.

This is also a great pie! This pie incorporates two key concepts that are pre-requisites for amazing apple pies - (1) a mixture of different types of apples & (2) cooking apples in advance of the pie baking to fully release their juices. This pie takes a little more effort but it is a very good apple pie.
