1½ cups graham cracker crumbs
¼ cup packed light brown sugar
Kosher salt
6 T. unsalted butter, melted
8 large egg yolks
2 (14oz.) cans sweetened condensed milk
¼ cup fresh key lime juice or fresh lime juice
Unsweetened whipped cream
Lime slices for garnish

Preheat oven to 350º. In medium bowl, whisk the graham cracker crumbs with the brown sugar & a pinch of salt. Add the melted butter. Mix until the crumbs are evenly moistened. To form the crust, press the crumbs evenly over the bottom & up the side of a 10” metal pie plate. Bake 10 minutes until just set. Cool completely. In a bowl, whisk the egg yolks with the condensed milk, lime juice & a pinch of salt until smooth. Pour the filling into the cooled crust. Place in oven. Immediately lower the oven temperature to 325º. Bake for 20-25 minutes until set around the edges & slightly jiggly in the center. Let cool to room temperature. Refrigerate until firm, at least 6 hours or overnight. Mound the whipped cream on the pie & garnish with key lime slices.

This is another great key lime pie. I like the two layer recipe better, but this is easier & quicker. I would use the Graeter's whipped cream on the top rather than the unsweetened whipped cream.
